This Paleo Carne Asada is a flavorful and gut-friendly version of the classic Mexican dish. Marinated in citrus juice, cilantro, garlic, and tamari, it’s tender, zesty, and suitable for Crohn’s patients who want a satisfying but gentle meal. Cooking it over an open flame brings out the best smoky flavor, but broiling works well too.

Serves: 4
Prep Time: 20 minutes + 1–8 hours marinating
Cook Time: 10–15 minutes grilling

Ingredients

  • 2 lbs skirt steak, fat trimmed

  • 1 jalapeño, seeded and minced (leave some seeds for heat)

  • 6 cloves garlic, minced

  • 1 cup fresh cilantro leaves, chopped

  • Juice of 2 oranges

  • Juice of 3 limes

  • Juice of 2 lemons

  • 2 tbsp tamari (gluten-free soy sauce)

  • 1/3 cup olive oil

  • 1 tsp ground cumin

  • 1 tsp kosher salt

  • 1/4 tsp freshly ground black pepper

Instructions

  1. Make the marinade: In a large glass baking dish, whisk together jalapeño, garlic, cilantro, citrus juices, tamari, olive oil, cumin, salt, and pepper until well combined.

  2. Marinate the steak: Lay the skirt steak in a single layer in the dish, turning to coat all sides. Cover and refrigerate for 1–8 hours (not longer, or the citrus will begin breaking down the meat).

  3. Grill: Preheat an outdoor grill or broiler to high heat. Grill steak 4–6 minutes per side, depending on desired doneness.

  4. Rest and serve: Remove from heat, let rest 5 minutes, then slice thinly against the grain. Serve with leafy greens, grilled vegetables, or cauliflower rice for a full paleo meal.
