A hearty and warming dish, Paleo Chili skips the beans and processed ingredients while keeping all the bold, spicy flavors you love. Made with fresh vegetables, grass-fed ground beef, and homemade chili powder, this recipe is both satisfying and gut-friendly—perfect for those following a Paleo or Crohn’s-friendly diet.

Ingredients

  • 2 large onions

  • 4 cloves of garlic

  • 2 jalapeño peppers (seeds removed, unless you want it very hot)

  • 1 red bell pepper

  • 12 tomatoes

  • 2 pounds of hamburger

  • ¼ cup chili powder (Click for recipe)

  • 2 tablespoons olive oil

Instructions

  1. Mix the hamburger with the chili powder and place it in a frying pan. Brown, drain the grease, and set aside.

  2. Cut 4 of the tomatoes into small cubes and set aside.

  3. Finely dice the onion, bell pepper, and jalapeños (remove seeds if you don’t want it too hot). Sauté with olive oil in a stockpot until tender. Add the diced tomatoes and garlic (finely minced or pressed).

  4. Add the hamburger to the pot and stir.

  5. Puree the remaining tomatoes in a blender and add them to the mixture. Cook on low heat for about an hour.

Notes:

  • You can substitute canned diced tomatoes and tomato sauce, but fresh tomatoes are better for Crohn’s patients.

  • The heat level depends on jalapeño seeds: keep them for very hot chili, use half for mild spice, or remove all for a gentler flavor.
