A classic chicken salad made Paleo-friendly, this dish combines tender chicken, crunchy celery, and sweet cranberries, all bound together with creamy homemade mayonnaise. It’s quick to prepare, full of flavor, and perfect for a light meal or snack.

Ingredients

  • 2 cups of cooked chicken, chopped into small pieces

  • ½ cup of dried cranberries

  • 1 small onion (preferably sweet, like Vidalia), finely chopped

  • 2 stalks of celery, finely chopped

  • ½ cup of Paleo-friendly mayonnaise (do not use commercial mayonnaise. Click here for the recipe)

Instructions

  1. Mix all the ingredients in a bowl until well combined.

  2. Serve with cucumber slices or Paleo crackers. (Ella’s Flats makes seed-based crackers that are Paleo-friendly. If you have Crohn’s disease, check with your doctor before consuming them.)
