Paleo Faux Potatoes (Roasted Parsnips)
Parsnips make a perfect Paleo-friendly substitute for potatoes. Naturally sweet and starchy, they roast up golden and crisp while staying gentle on digestion. This “faux potatoes” recipe delivers all the comfort of roasted potatoes without the nightshades, making it a great choice for Paleo, gluten-free, and Crohn’s-friendly diets.

Ingredients
- 2 pounds parsnips, peeled and cut into 2-inch pieces (like French fries)
- ¼ cup extra-virgin olive oil
- 2 teaspoons dried basil
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Instructions
- Preheat oven to 425°F (220°C).
- Spread parsnips on 2 large baking sheets without overcrowding.
- In a small bowl, whisk together olive oil, basil, garlic powder, salt, and pepper.
- Brush parsnips with the mixture, turn them, and brush the other side.
- Roast for about 30 minutes, turning once halfway through, until golden and easily pierced with a knife.
