This Paleo Polish Pork Stew is a hearty and nourishing dish inspired by traditional Eastern European flavors. Ingredients
- 2.5 lbs boneless pork butt or shoulder, trimmed and cubed
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 garlic cloves, crushed
- 1 yellow onion, chopped
- 3 bay leaves
- 8 peppercorns
- 8 whole allspice seeds
- 2 carrots, sliced
- 1 parsnip, sliced
- 1 red bell pepper, sliced
- ¼ cup dried mushrooms (optional)
- 2 tablespoons fresh thyme
- 6 tablespoons coconut flour
- 5 cups water or beef stock
Instructions
- Trim excess fat from pork, wash, dry, and cut into cubes. Season lightly with salt and pepper.
- Heat olive oil in a stock pot and brown the pork on all sides.
- Add onion and sauté until tender. Stir in crushed garlic.
- Pour in water or beef stock.
- Add bay leaves, peppercorns, allspice, carrots, parsnip, bell pepper, mushrooms (if using), and thyme.
- Bring to a boil, then reduce heat to low, cover, and simmer for at least 1.5 hours, until pork is tender.
- In a small bowl, whisk coconut flour with ½ cup water to make a slurry. Stir into stew to thicken.
- Adjust seasoning with salt and pepper, then serve hot.
