This Paleo Polish Pork Stew is a hearty and nourishing dish inspired by traditional Eastern European flavors. Tender pork is simmered slowly with root vegetables, bell peppers, garlic, and warming spices, creating a rich and satisfying meal. Ingredients

  • 2.5 lbs boneless pork butt or shoulder, trimmed and cubed
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 garlic cloves, crushed
  • 1 yellow onion, chopped
  • 3 bay leaves
  • 8 peppercorns
  • 8 whole allspice seeds
  • 2 carrots, sliced
  • 1 parsnip, sliced
  • 1 red bell pepper, sliced
  • ¼ cup dried mushrooms (optional)
  • 2 tablespoons fresh thyme
  • 6 tablespoons coconut flour
  • 5 cups water or beef stock

Instructions

  1. Trim excess fat from pork, wash, dry, and cut into cubes. Season lightly with salt and pepper.
  2. Heat olive oil in a stock pot and brown the pork on all sides.
  3. Add onion and sauté until tender. Stir in crushed garlic.
  4. Pour in water or beef stock.
  5. Add bay leaves, peppercorns, allspice, carrots, parsnip, bell pepper, mushrooms (if using), and thyme.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for at least 1.5 hours, until pork is tender.
  7. In a small bowl, whisk coconut flour with ½ cup water to make a slurry. Stir into stew to thicken.
  8. Adjust seasoning with salt and pepper, then serve hot.
