  • 4 pounds lamb roast
  • 2 onions, sliced
  • 8 cloves garlic, minced or pressed
  • 1 cup Kalamata olives, pitted (include the brine/liquid)

  • 2 zucchini, quartered and sliced
  • 1 tablespoon oregano
  • 2 teaspoons marjoram
  • 1 teaspoon thyme
