Ingredients

  • ½ pound fresh spinach, roughly chopped
  • 10 ounces sliced mushrooms
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • ¼ cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • ½ cup white wine
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onions and garlic; sauté until onions become translucent.
  3. Stir in mushrooms and cook for 3–4 minutes, until they shrink and release liquid.
  4. Add spinach, basil, white wine, and balsamic vinegar. Cover and simmer for 5 minutes.
  5. Season with salt and pepper to taste. Serve warm as a flavorful Paleo side dish.
