Ingredients
- ½ pound fresh spinach, roughly chopped
- 10 ounces sliced mushrooms
- 2 cloves garlic, minced
- 1 small onion, chopped
- ¼ cup fresh basil, chopped
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- ½ cup white wine
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onions and garlic; sauté until onions become translucent.
- Stir in mushrooms and cook for 3–4 minutes, until they shrink and release liquid.
- Add spinach, basil, white wine, and balsamic vinegar. Cover and simmer for 5 minutes.
- Season with salt and pepper to taste. Serve warm as a flavorful Paleo side dish.
