Ingredients
- 1 spaghetti squash ([Click here for recipe])
- 2 pounds ground beef
- 4 cloves garlic, finely minced or pressed
- 2 large onions, chopped
- 10 tomatoes, pureed in a blender
- ½ cup fresh basil (or 3 tablespoons dried)
- ½ cup fresh oregano (or 3 tablespoons dried)
- ½ cup red wine
Instructions
- Prepare spaghetti squash according to the recipe and set aside.
- In a skillet, brown the ground beef. Drain and set aside.
- In a large stock pot, sauté onions until tender, then add garlic.
- Return the browned beef to the pot. Stir in basil, oregano, and pureed tomatoes.
- Add red wine, bring to a boil, then reduce heat. Simmer on low for 1 hour, stirring occasionally.
- Serve meat sauce over spaghetti squash strands.
