Ingredients

  • 1 spaghetti squash ([Click here for recipe])
  • 2 pounds ground beef
  • 4 cloves garlic, finely minced or pressed
  • 2 large onions, chopped
  • 10 tomatoes, pureed in a blender
  • ½ cup fresh basil (or 3 tablespoons dried)
  • ½ cup fresh oregano (or 3 tablespoons dried)
  • ½ cup red wine

Instructions

  1. Prepare spaghetti squash according to the recipe and set aside.
  2. In a skillet, brown the ground beef. Drain and set aside.
  3. In a large stock pot, sauté onions until tender, then add garlic.
  4. Return the browned beef to the pot. Stir in basil, oregano, and pureed tomatoes.
  5. Add red wine, bring to a boil, then reduce heat. Simmer on low for 1 hour, stirring occasionally.
  6. Serve meat sauce over spaghetti squash strands.
