This homemade mayonnaise is Paleo-friendly, Roadmap to Health compliant, and free from processed oils. A simple, fresh alternative to commercial mayonnaise.

Ingredients

  • 1 large egg, at room temperature
  • ½ tbsp dry mustard
  • 1 tbsp vinegar (red, white, or cider — or substitute lemon juice)
  • Salt, to taste
  • 1 cup extra virgin olive oil

Optional: a drizzle of honey, plus black pepper for seasoning


Instructions

  1. Place the egg, vinegar (or lemon juice), and mustard powder in a food processor. Blend until combined.
  2. With the processor running, slowly drizzle in the olive oil through the feeding tube. This will take a few minutes.
  3. As the mayonnaise thickens toward the end, add optional honey, salt, and black pepper. Pulse a few times to blend.
  4. Store refrigerated in a sealed container.
