This paleo crab salad recipe is ideal for those following the Paleo diet or the Roadmap to Health plan. It’s fresh, simple, and served in crisp lettuce wraps.

Ingredients
- 1 medium lemon (zest and juice)
- 1 lb flaked cooked or canned crab meat
- 1 small tomato, chopped
- 1/2 Vidalia onion, finely chopped
- 2 tbsp Paleo-friendly mayonnaise (do not use commercial mayonnaise — click here for recipe)
- 2 tsp fresh chives, chopped
- Ground black pepper, to taste
- 1 head romaine lettuce, leaves separated
- 1 red bell pepper, chopped
Instructions
- From the lemon, grate 1/2 tsp of zest and squeeze the juice. Mix together; set aside.
- In a medium bowl, combine crab meat, tomato, onion, mayonnaise, chives, bell pepper, black pepper, and the lemon zest/juice mixture.
- Spoon the crab salad onto romaine lettuce leaves.
- Serve chilled as lettuce wraps.
