This Crohn’s friendly taco salad is ideal for those following the Specific Carbohydrate Diet (SCD), the Roadmap to Health plan, or the Roadmap to Health for IBD sufferers.

Ingredients
- 1 pound ground beef
- 3 heads Romaine lettuce, chopped
- 3 cloves garlic, minced or pressed
- 1 Vidalia onion, finely chopped
- 1 tablespoon chili powder
- 1 cup tomatoes, chopped
- 1 avocado, sliced
- 1 bunch cilantro, chopped
- Juice of 4 limes
- 1 cup salsa
Instructions
- In a large skillet, brown the ground beef. Add garlic and chili powder while browning.
- Drain the fat once the beef is fully cooked.
- In a large bowl, prepare the salad with lettuce, tomatoes, onion, and avocado.
- Add the ground beef and toss.
- Top with cilantro and lime juice.
- Serve with salsa on the side for individual portions.
