Ingredients

  • 2 cups Paleo-friendly mayonnaise (do not use commercial mayonnaise — click here for recipe)
  • 1 clove garlic, finely chopped
  • 1/2 tsp chili garlic sauce (or hot sauce, like Tabasco)
  • 1 cup Paleo bread crumbs (click here for recipe)
  • 1 tsp oregano
  • 1 tsp basil
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 2 large firm tomatoes, cut into 1/2-inch slices OR 8 Roma tomatoes

Instructions

  1. In a medium bowl, blend Paleo-friendly mayonnaise, olive oil, garlic, and chili garlic sauce. Do not use commercial mayonnaise; find our recipe. Set aside.
  2. In a shallow dish, combine Paleo bread crumbs with salt, oregano, and basil.
  3. Brush tomato slices with the mayonnaise mixture, then dip in the breadcrumb mixture.
  4. Grill tomatoes for about 8 minutes, or until golden brown.
  5. Serve warm as a flavorful Paleo side dish.
