Ingredients
- 2 cups Paleo-friendly mayonnaise (do not use commercial mayonnaise — click here for recipe)
- 1 clove garlic, finely chopped
- 1/2 tsp chili garlic sauce (or hot sauce, like Tabasco)
- 1 cup Paleo bread crumbs (click here for recipe)
- 1 tsp oregano
- 1 tsp basil
- 1/2 tsp salt
- 2 tbsp olive oil
- 2 large firm tomatoes, cut into 1/2-inch slices OR 8 Roma tomatoes
Instructions
- In a medium bowl, blend Paleo-friendly mayonnaise, olive oil, garlic, and chili garlic sauce. Do not use commercial mayonnaise; find our recipe. Set aside.
- In a shallow dish, combine Paleo bread crumbs with salt, oregano, and basil.
- Brush tomato slices with the mayonnaise mixture, then dip in the breadcrumb mixture.
- Grill tomatoes for about 8 minutes, or until golden brown.
- Serve warm as a flavorful Paleo side dish.
