These crispy zucchini fritters are Crohn’s friendly, Paleo-approved, and perfect for a light meal or snack. Made with fresh zucchini, eggs, garlic, and herbs, they’re pan-fried in olive oil for a golden finish without flour or grains.
Ingredients
- 2 large zucchinis
- 3 large eggs
- 2 cloves garlic, crushed in a press
- ¼ teaspoon dried basil
- ¼ teaspoon dried oregano
- Salt and pepper, to taste
- Olive oil (enough for ½-inch depth in pan)
Instructions
- Grate the zucchini and squeeze out excess moisture with a clean towel.
- In a mixing bowl, combine zucchini, eggs, garlic, basil, oregano, salt, and pepper. Mix thoroughly.
- Heat olive oil in a frying pan over medium heat until hot.
- Scoop zucchini mixture into the pan, flatten with a spatula, and cook until golden brown.
- Flip and brown the other side.
- Remove from heat, season with additional salt and pepper, and serve warm.
