These crispy zucchini fritters are Crohn’s friendly, Paleo-approved, and perfect for a light meal or snack. Made with fresh zucchini, eggs, garlic, and herbs, they’re pan-fried in olive oil for a golden finish without flour or grains.

Ingredients

  • 2 large zucchinis
  • 3 large eggs
  • 2 cloves garlic, crushed in a press
  • ¼ teaspoon dried basil
  • ¼ teaspoon dried oregano
  • Salt and pepper, to taste
  • Olive oil (enough for ½-inch depth in pan)

Instructions

  1. Grate the zucchini and squeeze out excess moisture with a clean towel.
  2. In a mixing bowl, combine zucchini, eggs, garlic, basil, oregano, salt, and pepper. Mix thoroughly.
  3. Heat olive oil in a frying pan over medium heat until hot.
  4. Scoop zucchini mixture into the pan, flatten with a spatula, and cook until golden brown.
  5. Flip and brown the other side.
  6. Remove from heat, season with additional salt and pepper, and serve warm.
