This traditional Greek green bean dish is made Crohn’s-friendly with olive oil, Roma tomatoes, garlic, and oregano. A nourishing Roadmap to Health side dish.

Ingredients

  • 2 pounds green beans
  • 1 pound Roma tomatoes
  • 4 cloves garlic, minced or pressed
  • 1 tbsp oregano
  • 1 cup olive oil
  • 2 cups water

Instructions

  1. Place green beans (whole, or you can cut them in half) into a pressure cooker.
  2. Cut Roma tomatoes into eighths and add to the cooker.
  3. Add garlic and oregano.
  4. Pour in olive oil and water.
  5. Cook over medium until the pressure marker rises. Release pressure, then serve warm.
