Ingredients
- 4 tablespoons fresh basil, chopped (or 1 tablespoon dried basil)
- 2 tomatoes, pureed in a blender
- 2 garlic cloves, minced
- 1 tablespoon lemon juice
- 1 teaspoon sea salt
- 1 teaspoon ground black pepper
- 2 tablespoons olive oil
- 4 chicken breasts (about 2 pounds), cut into cubes
- Olive oil (for pan) or oil spray (for barbecue)
- Short bamboo skewers (soaked in water to prevent burning)
Instructions
- In a bowl, whisk together basil, garlic, pureed tomato, olive oil, lemon juice, salt, and pepper.
- Add chicken cubes to the marinade, toss to coat, cover, and refrigerate overnight.
- Thread marinated chicken onto bamboo skewers.
- Heat olive oil in a large frying or grill pan (or preheat BBQ grill).
- Cook skewers for about 4 minutes per side, until golden and fully cooked through (165°F internal temperature).
- Let rest for a few minutes before serving to lock in juices.
