Ingredients

  • 4 tablespoons fresh basil, chopped (or 1 tablespoon dried basil)
  • 2 tomatoes, pureed in a blender
  • 2 garlic cloves, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 4 chicken breasts (about 2 pounds), cut into cubes
  • Olive oil (for pan) or oil spray (for barbecue)
  • Short bamboo skewers (soaked in water to prevent burning)

Instructions

  1. In a bowl, whisk together basil, garlic, pureed tomato, olive oil, lemon juice, salt, and pepper.
  2. Add chicken cubes to the marinade, toss to coat, cover, and refrigerate overnight.
  3. Thread marinated chicken onto bamboo skewers.
  4. Heat olive oil in a large frying or grill pan (or preheat BBQ grill).
  5. Cook skewers for about 4 minutes per side, until golden and fully cooked through (165°F internal temperature).
  6. Let rest for a few minutes before serving to lock in juices.
