Ingredients
- ½ cup olive oil
- 2 lemons, juiced and zested
- 4 cloves garlic, minced
- 1 shallot, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh oregano, chopped
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon fresh ground black pepper
- 1 whole chicken, cut into pieces
Instructions
- In a medium bowl, combine olive oil, lemon juice and zest, garlic, shallot, rosemary, thyme, oregano, paprika, salt, and pepper. Whisk well to combine.
- Pat chicken pieces dry with paper towels. Add to the marinade, turning to coat evenly. Cover and refrigerate for at least 1 hour (up to 2 hours).
- Heat a 12-inch skillet or frying pan over medium-high heat until hot. Shake off excess marinade and place half the chicken pieces in a single layer. Cook 5–6 minutes per side, until browned and cooked through (165°F internal temperature). Transfer to a serving plate.
- Repeat with remaining chicken. Spoon off any leftover garlic in the pan.
- Alternative: Grill chicken over medium-high heat for 5–6 minutes per side until cooked through.
- Serve hot with lemon wedges or Paleo-friendly sides.
