Ingredients

  • ½ cup olive oil
  • 2 lemons, juiced and zested
  • 4 cloves garlic, minced
  • 1 shallot, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon fresh ground black pepper
  • 1 whole chicken, cut into pieces

Instructions

  1. In a medium bowl, combine olive oil, lemon juice and zest, garlic, shallot, rosemary, thyme, oregano, paprika, salt, and pepper. Whisk well to combine.
  2. Pat chicken pieces dry with paper towels. Add to the marinade, turning to coat evenly. Cover and refrigerate for at least 1 hour (up to 2 hours).
  3. Heat a 12-inch skillet or frying pan over medium-high heat until hot. Shake off excess marinade and place half the chicken pieces in a single layer. Cook 5–6 minutes per side, until browned and cooked through (165°F internal temperature). Transfer to a serving plate.
  4. Repeat with remaining chicken. Spoon off any leftover garlic in the pan.
  5. Alternative: Grill chicken over medium-high heat for 5–6 minutes per side until cooked through.
  6. Serve hot with lemon wedges or Paleo-friendly sides.
