Ingredients

  • 3 bunches of baby bok choy, cleaned with the ends removed
  • 2 cloves garlic, minced
  • ¼ teaspoon red pepper flakes (more or less, to taste)
  • 1 tablespoon grated ginger
  • 2 tablespoons peanut oil
  • 1 tablespoon sesame oil
  • ½ cup chicken broth

Instructions

  1. Heat sesame oil and peanut oil in a large skillet or wok over medium heat.
  2. Add garlic, ginger, and red pepper flakes; sauté for 1–2 minutes until fragrant.
  3. Add bok choy and stir to coat with oil and aromatics.
  4. Pour in chicken broth, cover, and simmer for 2–3 minutes until steam forms.
  5. Uncover and cook another 3–4 minutes until the broth evaporates and bok choy is tender.
  6. Serve hot as a Paleo side dish.
