This Paleo aioli recipe is creamy, garlicky, and Roadmap to Health compliant. Made with Paleo-friendly mayonnaise, garlic, lemon, and Dijon, it’s the perfect sauce or dip.

Ingredients

  • 5 medium cloves garlic, minced or crushed in a garlic press
  • 2 tsp lemon juice
  • Salt, to taste
  • 1/2 cup Paleo-friendly mayonnaise (do not use commercial mayonnaise — click here for recipe)
  • 1/4 tsp Dijon mustard

Instructions

  1. In a small, shallow bowl, combine garlic and lemon juice. Stir, spread into an even layer, and lightly salt. Let sit 10–15 minutes.
  2. Mix Dijon mustard into the Paleo mayonnaise.
  3. Strain the garlic/lemon mixture through a fine mesh strainer or cheesecloth over the mayonnaise mixture. Press with a spatula to release all liquid.
  4. Mix well until smooth.
  5. Store covered in the refrigerator for up to 10 days. Aioli will thicken as it chills. Use as a dip, sandwich spread, or drizzle over roasted vegetables.
