Ingredients
- 1 zucchini, sliced
- 1 red bell pepper, seeded and cut into quarters
- 1 yellow squash, sliced
- ½ red onion, cut into 1-inch pieces
- 1 pt. cherry tomatoes
- 2 cloves garlic, minced or pressed
- 1 cup balsamic vinaigrette
- Salt and pepper to taste
- Small bamboo skewers
Instructions
- Cut the vegetables and place them in a bowl.
- Add vinaigrette and pressed garlic. Season with salt and pepper, then toss.
- Thread vegetables onto skewers, alternating onion, zucchini, tomato, yellow squash, etc.
- Grill skewers until vegetables are tender, about 10 minutes.
