Ingredients

  • 1 zucchini, sliced
  • 1 red bell pepper, seeded and cut into quarters
  • 1 yellow squash, sliced
  • ½ red onion, cut into 1-inch pieces
  • 1 pt. cherry tomatoes
  • 2 cloves garlic, minced or pressed
  • 1 cup balsamic vinaigrette
  • Salt and pepper to taste
  • Small bamboo skewers

Instructions

  1. Cut the vegetables and place them in a bowl.
  2. Add vinaigrette and pressed garlic. Season with salt and pepper, then toss.
  3. Thread vegetables onto skewers, alternating onion, zucchini, tomato, yellow squash, etc.
  4. Grill skewers until vegetables are tender, about 10 minutes.
