This Crohn’s friendly mango salsa is bright and zesty, made with Paleo-friendly mayonnaise, lime, cumin, tomatoes, mango, onion, jalapeño, and cilantro. Roadmap to Health compliant.

Ingredients

  • 1/4 cup Paleo-friendly mayonnaise (do not use commercial mayonnaise — see recipe)
  • 1 tbsp lime juice
  • 1/2 tsp ground cumin
  • 2 tomatoes, chopped
  • 1 medium ripe mango, peeled and chopped
  • 1/2 cup chopped Vidalia onion
  • 1 medium jalapeño pepper, finely chopped (seed to reduce heat)
  • 2 tbsp chopped fresh cilantro

Instructions

  1. In a medium bowl, mix Paleo-friendly mayonnaise with lime juice and cumin.
  2. Stir in tomatoes, mango, onion, jalapeño, and cilantro until combined. Chill if desired and serve.
